I don’t think they have any of those variants except for Chaturanga or Chaturaji on chess.com.
Ah well, now I have got what you mean.
The 'variant' available on Chessdotcom actually is the standard Shatranj, but in fact Chessdotcom calls it "Chaturanga". So I use the 3 terms Shatranj, Chaturanga and Ancient Chess, as synonymous because they can be intended as the same thing.
Chaturanga has several meanings, actually it may refer also to the ancient Chaturaji. It's a bit confusing I know, but it's also a bit off-topic here. There are other forum threads of the Club related to that matter.
What's the format?
The format might depend on the number of players. Normally I do prefer blitz 3'|3" single round-robin which means everyone plays everyone else once.
when do the registrations close

Registrations close before the start of the tournament.
Ah okay. Well, let's say, I would like to close the registrations 1 or 2 days before the start (for having the time to organise). And I would like to have 6 or 8 participants, so I could decide to stop the registrations at a convenient moment.
@TheUltraTrap, I'll keep a spot open for you until the last moment and keep you informed on possible "hurry" situations.

Who's in ??
The tournament will be played under the rules of Shatranj/Chaturanga. This is open to everyone, it doesn't matter the rating, it doesn't matter the geographical location neither.
