Because most of what they play are theories calculated in the extremes using the optimum moves and even forcing draws.. Example Berlin Defense. A well known drawing weapon against higher rated opponents provided you know all the theories supporting it.

When you draw in tournaments you gain points whereas if you lose you'll get zero. That's why most of them settle for a draw than a loss..

The reason is that in closed invite tournaments mostly the top 20 in the world are invited so players are very careful not to drop out. This is reflected in the game play. With the black pieces your are worse and against the immense preparation it is hard to try to win so many people settle for lines where the objective is to draw rather than to win. It makes it quite hard for the white players to really push for a win when the other player mostly wants to shut down the game especially if the other player is incredibly strong and well prepared.
