what it means is that we assume that the opposite is true, then we prove that the opposite cannot be true
in this case, if we assume that black has a way to win, because this is the opposite of white winning or drawing, and so we move soemthing like Nh3 then back to Ng1, and this effectively makes the player playing black into playing the white pieces, because the position has not changed and black is to play.
Therefore, it must be false, so white has a way to draw/win

proof by contradiction works by making an assumption and then drawing contradictary statement(s) from that assumption, proving that the original assumption is false
