This is DEFINITELY a tricky one.

You never notice me.

You barely recognize it exists.

I am found in the sky at night.

And if you are sneaky, in the depths below, in the day.

I don't exist in the Nether, nor the End.

No one cares about me.

I have no purpose in the Minecraft world.

What am I?

the sun/ moon / stars? At day lag can make you see through the ground revealing the sun below the bedrock past the void?

I can only think of moon, because, well, you can see it under the bedrock at day... day gecko has said already though, I just gave it another go

Well, yes, there are stars in MC.  Maybe if you have a texture pack you don't.
