Platforms are REALLY hard to break

That's never said in the desciption of the platforms:

Creates stationary objects that anybody can use. Objects are not affected by gravity and can be destroyed. You can have up to 3 objects at a time, and can remove objects to allow self to make more objects. If you camp using this ability, your objects will be destroyed.

the vine does minimal damage against the platform, but it'll break eventually.

I just keep hitting the platform

you do doubt it and block the pellet with a platform. so sad, you wouldn't let it help you (which it totally does)
