I take the pawn and that is my third check.

That sounds interesting, so, if you check the king, sacrificing a knight or bishop, they will most likely be able to do the same to you, so it isn't really worth it anymore. Good idea!
In this variant we are mixing together: 3 check and king of the hill.
There are now 3 ways to win: Checkmate, 3 checks given to the opponent and Getting your king to one of the four center squares of the board (e4, e5, d4, d5)
