Reasons I think this would be a good idea:
It is more visually pleasing, just in general.
As most UI's we see nowadays are built around having information in the centre of the browser/screen. Meaning we are used to looking in that region, potentially things off centre are using other parts of our cognition to focus on something out of place.
Most chess websites have the board in the middle of the screen or in the centre, so chess.com would fall in line with its competitors.
I'm blind in one eye so it's even harder for me to scan the board.
When you play OTB, the board it in the centre as well.

You can zoom in the screen and it will default to centre. You could also shrink the window, keeping the same board size, but once again it will default to centre.
