Another variant idea I just came across was "veto chess". Essentially, you veto your opponent's move, making it an unplayable move, then your opponent has to move and veto one of your moves.
I saw a reply on a forum thread about "coin chess". To sum it up, a coin is placed on d3, putting white in check. The coin copies the current player's move, and white goes first. It can capture, as well. A move is not legal if it forces the coin to make an illegal move. I did not think up this one, but do think it could make quite an interesting game.
