well the rarest mob is the ender dragon because there can only have one at a time so i would consider him as the rarest and if it isn't him i would pick the killer rabbit because he is also extremely rare

I'm not sure what the rarest mob I've seen in minecraft is, but in creative mode I've seen a pink sheep naturally spawn right in front of me

i don't know once i saw a pink sheep and then once i saw a brown panda which is rarer?

Full dim skeleton on spider is possible but with sword it isn't possible unless it picks the sword from the floor up which you dropped or a mob which you killed
