A zwischenzug is a so-called "intermediate move". When one player takes a queen for a queen trade, you would expect their opponent to take back. However, if that opponent takes a rook with check, you have to move out of check and lose the exchange. If the opponent recaptures the queen first, you would have time to move your rook out of the way.
