It is possible it teleported away and then either died in water or despawned. idk
Why do Enderman Randomly teleports somewhere and then disappears?

you're not reading the entire thing, the enderman teleported away and was never to be seen again

but it's quite common I think, like they could teleport underground or smthing

If this was true then you would find random overworld blocks in the end.
Sometimes endermen will telport really far,like beyond your render distance

When I was trying to kill an enderman it randomly teleports then disappears. No ender pearl for me : (
