Good Chess Books for Beginners and Beyond...

I am an 800-rated player (500 US chess) and have been stuck at this level for a seemingly long time. I was recently recommended the book, The Modernized Modern Defense by Daniel Fernandez, by a friend. While the book was interesting, it seemed far too advanced for my level and not really my play style. I was wondering if anybody here had any suggestions for books I could get to study or other ways I could study my chess. I am particularly interested in creating plans in the middle game since that seems to be where I get stuck most of the time or playing with black in general, but I would also appreciate any opening or endgame book suggestions (I am currently learning the Caro-Kann). Thanks!
