So what I'd ideally want, is a chess book which has every major pawn structure, how to play around that structure, the likely pace of the middlegame, likely pawn breaks etc. The nearest I've found which I've been thinking of buying is "Pawn Structure Chess" by Andrew Soltis. I was wondering if anybody knew of any other books which cover this sort of thing? Thanks in advance.

Check out “Small Steps to Giant Improvement” by Sam Shankland. I have it, great book, and I think it’s sort of on track for what you’re looking for.

I agree.  I would highly recommend this book by Mauricio Flores Rios.  It's an improvement over Soltis' Pawn Structure Chess, which I recommend as a supplement as it contains lots of example games illustrating the major opening pawn structures.

There’s also Winning Chess Middlegames by Ivan Sokolov, as well as the second volume in Pachman’s Complete Chess Strategy (the three volume set). The second half of Hans Kmoch’s Pawn Power in Chess also talks about this stuff, but I’ve found him a little difficult to read, and he spends a disproportionate amount of time on Benoni structures (which, if you’re interested in Benoni structures, there are several books specifically on the Benoni that will be more beneficial).
