For an absolute beginner I would recommend Comprehensive Chess Course volume I by Roman Pelts and Lev Alburt. For someone who is past the basics of knowing how the pieces move try Comprehensive Chess Course volume II.

The Winning Chess series by Yasser Seirawan is also a good start.
