I would say it is one of these Jacques which had variant profiles.
The knight looks like a cook design but other pieces dont belong to that symmetry.

That's a beautiful set.
Looking at the wear on the pieces and board, it's been played for years. Definitely wasn't sitting on a shelf gathering dust.
Why would you want to remove, that hard earned wear and tear?
