I've just downloaded and installed the Arena GUI and Fritz 14 on my Windows 10 PC. I loaded Stockfish into both programs also, but I can't figure out how to force either Arena or Fritz to play the white side from the opening move and the top of the screen.
Also, when I have a position set up and flip the board, the software wants the pawns to capture and move in the same direction they were originally configured (before the flip of the board).
Does anyone have any suggestions or know where I can find a manual? Neither Arena nor Fritz's built-in Table of Contents Help manual doesn't seem to have suggestions (or at least, I can't find them).

I don't use Fritz, so I can't help you there. I use Arena for Linux, but I'd guess the Arena Help file would be similar for both Linux and Windows.
In Arena Help, if you look up "Playing a Game", you'll find this statement:
"If you want to play with black, click on the cog wheel symbol on the navigation bar or simply press the space bar. The engine will now move with white." I'll add that you can also do this via the menu: Game --> Move Now!
Flipping the board should have no effect on any other function - It's just how you see the board. So, your statement about the wrong piece movement direction makes no sense to me. It shouldn't happen. My guess is that you're entering the position incorrectly.
