I want to learn chess openings and so I got John Watson’s play the French as a book, but it is so hard to read. Are there ebooks that do the moves for you or are the ebooks just the regular book but in electronic form.

ebooks are typically like the regular books, but the ebook viewer apps allow you to click on the moves in the text when the move will be executed on the displayed board. 

Chessable is an excellent interactive chess instruction site....their "ebooks" are online only but are configured as chess lessons/courses within the framework of the book from which they are derived....some of the introductory courses are free...

I also suggest to check out Forward Chess and Everyman Chess  for their selection of chess books in e-book format.
