Playing a set position against Fritz

I have just downloaded Fritz and have worked out how to play training games by lowering its rating (side question, what is the difference between computer plays fast being checked and not checked?).
However, how do I play a long game/ game from a position against fritz. It seems like I have to keep pressing GO for it make a move. How do I make it move automatically (and preferably at a fixed rating)?
