Yes, the clock's manual settings allow you to set that time control (and just about any time control). The below YouTube video shows how to set a first time control of 40 moves in 80 minutes, followed by a sudden death time control of 30 minutes, with a 30 second US Delay for both time controls. You just need to modify your time settings accordingly.

I just got a DGT 3000 as a gift. It is my first chess clock and seems more complicated that others I have used. I was wondering if anyone knows if it can be set for “30 moves in 90 minutes followed by an allegro control of 60 minutes. There will be a 5 second delay used for the entire game.”
