Beat the Anti-Sicilians and The Modernized Sveshnikov both by Robert Ris would provide you a variation against the Open Sicilian and how to deal with all the White sidelines that avoid the Open Sicilian.

A good, instructive introduction to the Sicilian Defense, targeted primarily to experienced players is "Starting Out: The Sicilian", 2nd Edition, by John Emms. It treats all of the popular variations.
