++ A $25 book by a top grandmaster is better than a $25 session with a mediocre coach.
The book gives you 200 hours of top coaching.

"seeing how far I can push myself in 2 years" ++ In 2 years you can reach 2000. 

"never spent any time learning theory, openings" ++ That is useless

"I'd be looking for a more regimented approach"
++ The key is to play and to analyse your lost games
Some tactics puzzles are good too.
A good book is helpful too.
Study of annotated grandmaster games is beneficial.
Endgame study is useful.

"I'm already signed up for a few regional tournaments here in the Maritimes and will likely eventually be traveling Eastern/Central Canada and the USA as I progress."
++ That is good, but do not forget to thoroughly analyse your lost games.
