What would a coach focus on with a 1950-2000 rated blitz student?

Where should I seek specialist help on, topic wise, if I were to aim for 2100+?

He'd focus on the weakest areas in your chess understanding. And these things are personal.

For example, you might be weak in:

- pawn play

- play with/against space advantage

- piece exchanges

- open or close positions

- positions with/against isolated pawns.

etc.

First, he'll identify your weaknesses and then figure out how to work with them and improve your play.

Depends on the coach, and depends on what you're bad at. Of course, for the best results you must be honest with yourself and the coach.
