I have been working my way through the chess mentor. After a few lessons I go to the tactics trainer and attempt a good number. I have improved from around 700-800, now I float between 950 and 1030. So I think I am learning something. But I can't help but that most of the lessons are going in and then falling out again. I am not sure of the best way to do them. I imagine they are in some logical order, placed that way by an advanced GM.
What do most people do after learning a few lessons?
I am thinking that maybe people analyse games, but that to me is boring. I know a lot of people will say "play some chess". Often when I do play I find myself trying to play good opening principles, feeling like I have no clue of what I am doing. I have won more though recently. I just feel lost. So:-

I have had similar problems finding mentors. Lots of players available, here and in person, but very few are willing to take any time to teach. As I have learned over the years, I decided a long time ago that I would be different, and that I would accept any request to teach all that I know to whoever asks about chess, if at all possible. I do not teach officially, but I have helped several people learn the basics and talk through playing. If this sounds good to you, request friendship here, and we can arrange a time to play some educational chess. I do not have ELO rating, but I sit around 1400 to 1500, and have beaten 1700+ in club tournament games. Not great, but it's a start.
