What would you do as black in this position. Feel free to cite other sources if you know of a place where this is covered. I am very interested in how to reply as black.

Qg5. But I don't get why you didn't play dxc6 to free up your light squared bishop and queen, so if Nxe4 then Qd4.

In the position, ...Qg5. But it is not good for Black. Much better to retake with the dpawn.

retaking with the d-pawn is better, using the b-pawn makes the a-pawn extremely weak and isolated also a half open queen file can be a strength.

from that position I would say Qg5 is the best option, and Qe7 is not as good, but will win the pawn back.

But isn't the general idea to cature inwards with pawns? or is this an exception and i should capture with d. I do want to have at least passable center control.

Don't forget about blocking in your bishop instead of freeing him up

I believe this pretty much explains it all (chessgames.com opening explorer), look at the number of the games:

The majority of the time it is probably better to capture towards the center probably 2/3 the time, however in this case it is better to keep your pawns in thw stronger formation if it was a little deeper into the game, and he for example already castled queenside oh ya bust that b file wide open. You just limit your options with your weaknesses and rigidity to much at this point capturing with the b-pawn it basically makes it so u are 100% gonna castle king side, it is a good idea to keep your options open as long as you safely can.

If you played on move 3 d6 and went into the old steinitz line if he exchanged, you would be more solid

There are a lot of options for black on move 3 try Nf6 or d6 or Nge7, there are many ways to play this as black, white has a pretty good attack going in the roy lopez, the possibilites are endless, try some other lines for fun and practice
