A solid line against the Bowdler Attack?

I primarily play the Sicilian against 1.e4. For some reason one doesn't get the Open Sicilian position at my level (around 1000 Elo by chess.com standards). Mainly I have been facing the Bowdler attack whenever I play the Sicilian. Which one, out of the following two lines, is the best continuation for black against the Bowdler? Thanks in advance.

I prefer to keep it simple and go with 2.e6 to set-up 3. d5 and hit the bishop with tempo.

I believe it’s already equalize.

I am a Wing Attack player so most times, I will expand with a6, b5 hitting the bishop again and setting up a fianchetto for the Katalimov Bishop.

Im not a fan of e6 and g6 set-up because of the structural issues and there isn’t no need to.

I did play some games with the e6 and g6 setup and soon realized that I created some dark squared weaknesses which could be exploited by white and the only reason I got a winning position is those game were solely due to my opponent's mistakes and nothing else

The 2.e6/3.e6 setup is the engine favorite and is the most well known continuation so I guess I will stick to it (that d5 push is what achieves equality for black).
