Beginners response to 1.d4

I've searched around google and chess.com itself but have found nothing that's been too helpful despite very similar posts in the past. 

I'm looking for a easy to understand defence to 1.d4 from white, I've been playing 1...Nf6, followed by e6 and then 3...d5 (I'm not sure what opening that is) but it's been boring me and I've been lacking in results. I was just hoping someone could suggest something with easy ideas for a beginner to pursue and not tonnes of theory to read up on.

I know a lot of people seem to suggest not learning any openings whilst a low rating but I like to at least have some idea what I'm playing for early on and it's the aspect of my game causing the most problems at the moment so thought I'd try and do something about it.

As white I tend to play Queens Gambit lines, as when accepted without a blunder I tend to do very well and can cope with declined variations. As black I always play the caro-kann as it offers very similar lines at my level against most.

I'm around 900-950 rated on here if that helps. Thanks in advance.

In my humble opinion it's better to get a grasp of the Black's side of Queen's Gambit before trying to play Indian Defences

1...d5 2. c4 e6 would lead to positions fairly similar to the Caro-Kann.

Play ...d5 and learn the various methods of deploying the Queens gambit declined either classically or via the slav/seni-slav. The important point in all of these variations is to play ...c5 at some point and challenge white in the centre. The vast majority of people who play ...nf6 don't do it properly.
