Best openings for Black against whites's e4

Who said anything about stockfish? It's just less sound. And I've seen 2800 player play d4 and follow it up with h4 h5 and a4 a5 and win against another 2800 online.

OP asking for best openings for black against e4. "Best" doesn't consider psychological stuff or possible no-prep issues.

You just have to answer 2.Nf3 with 2...e5, and that's it.

2.d4 d5 is fine for Black.

If you have a temporary brain fart and have forgotten how the pawn(s) are moving, then it is the best move. At least it seems slightly better than 2...Rb8 to me.

Yes it is. After 3.e5 Bf5 Black will play ...e6 and a quick ...f6, and after 3.Nc3 dxe4 4.d5 Nb8! plus ...c6 White has next to nothing (or just nothing).

I’m unwilling to believe black equalizes if white plays accurate in the 3. e5 line

You can believe whatever you like, but Black's task in this line is easier than in the advance Caro, as ...f6 is easy to implement.
