best way to play the 3.c5 caro kann

So, here is the game

As you can see, I completely obliterated my opponent. The problem is that I felt extremely vulnerable in the middlegame. Maybe I should have played like this?
This delays taking "free pawns" while getting me closer to castling. Or maybe I should have pretended to play the french?
What do you think I should do in this types of positions?

I saw this, I just didnt know how to respond. I think both ways are fine, just depends more on which you would like more.
I would prefer putting the knight on f5 over grabbing that pawn immediately, as I feel having the queen in the corner could allow black to use it as a target. I would rather slowly put pressure while developing my peices.

Then again, I am a 850, sooooo

Edit: According to stockfish, you should take the pawn, but it also likes the knight on f5

anytime black can put the knight on f5 in the Caro kann is a good idea. especially if it is after the bishop is captured.

I don't play the c5 line. I would have to look at it more in depth.
