3...e6 isn't played very often in the caro kann, you may be confusing this with the semi-slav.

in the caro kann, you want to move your bishop to a square like f5 before playing e6

Karpov (when playing Black) liked the so-called Nimzovich Variation: 1 e4 c6 2 d4 d5 3 Nc3 de 4 Ne4 Nd7. Also often seen is 4...Nf6, and if 5 Nf6, then Black can play the solid 5...ef, or the more dynamic 5...gf.
