Well, you call for 2 different things.

 

1) Pawn Structure Coverage - See post 2, but that is not specific to the Caro-Kann.  One chapter will have that, but other structures are covered as well.

 

2) Middlegame ideas in the Caro - here I would suggest The Caro-Kann Move by Move.  It is a Black Repertoire and so does not cover all lines, but it does continue to analyze throughout each game rather than cutting off or simply listing unannotated moves after move 20.  It actually explains the rest of each game.

indeed. I personally get a kick out of actually playing over games by avid players of the Caro•Kann and annotating them myself. Certain positions and pawn structures of practical use to me. If you are soo inclined to study specific pawn structures in a more general way the above recommendation (A. Soltis) is a good one. For me, familiarity with fundamental positional play (static & dynamic with pieces & pawns) is more practical than just studying pawn structures . I like studying certain pawn structures more for side leisure, like studying endgame compositons.

I would recommend going to a database of master games and blitzing through a bunch of games in your chosen opening variation. That should give you a pretty good feel for each side's ideas in the typical positions.

When I say "blitz" I mean exactly that. The idea is to look at a lot of games, not to study a few games in great depth. In-depth study is of course useful too, but it has a different purpose.

The section on Jump Formations in Chapter 5 deals with Caro-Slav formations.
