But the major problem of your move order is on the main 3.d4, where u will have a problem to avoid e5 :
So, sorry, u avoided Maroczi bind but u allow worse stuff for you.
Moreover, with 2...g6 move order, u also allow other stuffs, like 3.d4 and Qxd4, 3.c3, 3.d4 and c3, etc...

Indeed there is nothing wrong to take that pawn, just pawn up for nothing.

I had a look on my database, only 6 or 7 games, (not really master level...), and no one played Nxe4. The reason seems quite obvious for me, it is just misprint or mistake when entering moves.

Of course 5.c4 doesnt make any sense unless u want to play with an handicap.

(the reason no one "takes that pawn" in the database isn't a mistake it's probably just the way databases work. They don't take move order into account when looking for positions so you can search for positions and find them by transposition.)
