Does this avoid the Maroczy Bind?

If it does prevent the bind, is it vulnerable to the Rossolimo or Yugoslav Attack?

Logically, it would seem to force a response of Nc3.

However, there are several thousand games in the master database from this position. Not one took the pawn.

But the major problem of your move order is on the main 3.d4, where u will have a problem to avoid e5 :
So, sorry, u avoided Maroczi bind but u allow worse stuff for you.
Moreover, with 2...g6 move order, u also allow other stuffs, like 3.d4 and Qxd4, 3.c3, 3.d4 and c3, etc...

Indeed there is nothing wrong to take that pawn, just pawn up for nothing.

I had a look on my database, only 6 or 7 games, (not really master level...), and no one played Nxe4. The reason seems quite obvious for me, it is just misprint or mistake when entering moves.

Of course 5.c4 doesnt make any sense unless u want to play with an handicap.

The move order in #1 avoids the Maroczy, but I fail to see its point: After 5.Nc3 Black has to enter normal Dragon positions by 5...d6, since 5...Bg7 6.e5 isn't good, and the same goes for the semi-accelerated Dragon after 5...Nc6 6.Nxc6 bxc6 7.e5 etc. See #4 for more details.

(the reason no one "takes that pawn" in the database isn't a mistake it's probably just the way databases work. They don't take move order into account when looking for positions so you can search for positions and find them by transposition.)
