Btw, the Blackmar-Diemer and the Latvian aren't sound gambits. You should just take the pawn and watch your opponent squirm.
I've been studying the Blackmar-Diemer since 2004 with the help of the best computer software and I have failed to find a refutation. As far as I can tell, Black draws at best.

I'm a big fan of the Smith-Morra Gambit against the Sicilian. 1.e4 c5 2.d4.
I probably wouldn't use it in correspondence play, though. =)
Also, I played the Benko Gambit with the Black pieces for a while. It's a fun way for Black to meet 1.d4. Plus, Black actually gets some long term positional concessions out of it.
My normal opening move as white is 1.e4. If my opponent responds with 1...e5 I will go in to the King's Gambit about 75% of the time. The rest of the time I will play 2.Nf3 Nc6 3. Bc4 and if my opponent plays 3...Bc5 I will play the Evan's Gambit. But those are the only two I really ever play. I may start using the Smith Morra in the Sicilian though.
King's Gambit works for me everytime.
