I love the Scotch. I play the Ruy Lopez, but if I were to choose a second option, it would by far be the Scotch. It can easily reach a solid, comfortable position for white. It’s also incredibly easy to learn.

I just love e4 openings in general. There are many variations you can choose from.

The Richter veresov attack is super under rated and very simple. You go d4 and after your opponent plays d5 OR Nf6 you go Nc3. At some point you will play Bg5 and just play for e4 with f3 and Qd3, castle long, dominate the center, and go for a kingside attack.
