I don't think there really is a deterministic answer to that question. The middlegame is somewhere between when the opening finishes and the endgame starts
Once you have all your pieces devoloped, you are likely in your middlegame. Potentially, you are still within opening theory and your opponent may not be fully developed and still in the opening.
The wikipedia article on it is a pretty good read too.
From another spurce I asked the same question, I have been told a very nice way to know when the opening phase ends, and I would like to know your opinion :

Practically speaking, you're in the middlegame once you've left your book knowledge of openings and have to start thinking on your own.
In a correspondence game, this might be 30 moves is.
If you're booked up with a repertoire you know backwards and forwards, that'll be anywhere from five moves in to a dozen or more, depending how cooperative your opponent is.
If you don't have a clue what you're doing out there, you're probably in the middlegame by move three.
I wouldn't worry too much about when the opening ends. Worry about playing moves that make sense. Opening and middlegame play should be complementary. What you start in the opening you continue or at least try to in the middlegame.
Forgive if I am incorrect but it seems like you seperate the two. You just play the opening and then when the middle game is there then you start playing and planning. The game is much more organic than many think.
I remember watching a chess tv show on German television. It was with a German GM and Kramnik. They commented on game of Kramnik against Ivanchuk( if I recall correctly). Over and over again the German GM kept asking that now the attack has started since the preparation was over. Kramnik kept saying no, I still considered it preparation to attack. It was clear how different the understanding between the two was. ("But now surely the preparation is over?!?" "Hmm, no, not really..." lol)

If we admit that a chess game has 3 phases, being
(1) opening, (2) middle game and (3) ending phase,
my question is ...
HOW DO WE KNOW OPENING PHASE HAS ENDED ?
