How do you deal with pawns on e5 and d4 when you play the Scandinavian defense?

Obviously, we are talking about a variant, when instead of taking our pawn on d5, the opponent push the pawn on e5 and eventually put his pawn on d4 as well. I often have trouble developing figures on the kingside. My knight can't go on f6, it can go on e7 but then it's blocking the queen and the bishop, it can go on h6 but that's the edge of the board and this whole situation makes it harder to castle on the king side as well. It's also not easy to fight for e5 and d4, usually these squares are well protected and I just feel kind of overwhelmed in this position in general.

Learn the Blackmar Diemer Gambit. I've heard it is a little tricky if unprepared so I would recommend using Lichess and look at the opening explorer to see what people play with an engine to find traps and continuations. You can also find good videos too

Study French and Caro Kann Advance variation games. Learn how to Attack the d4-e5 pawn chain with the light square bishop blocked by the e6-d5 pawn chain (French) and how much of an impact having it outside the pawn chain can make (Caro Kann).

If you play the Scandinavian, you should be very comfortable in the improved French/Caro that pushing to e5 gives you. Play bf5, then e6 and you have an improved French

Knight will probably go to e7 and either to g6 or c6

I agree with The  two previous posts: after White plays 2. e5, black pawn goes 2. ... c5, with idea of playing Bf5, Nc6, and pawn to e6. 

If you like the Scandinavian, a great book is “Smerdon’s Scandinavian”. David Smerdon covers the opening in great depth, and the book is fun and approachable. For what it’s worth, the author, GM David Smerdon, also advocates the moves given above.

I believe the knights go on g6 and c6 instead of the positions you showed but it's just semantics (yes I don't know what that means)

it could go to c6 and g6 but the knight on d7 also helps f6 in the future

Or just learn the French or Caro. I've made a great study on the French that should cover most things you will face here
