I need help on partic. sicilian line

Well capturing on c6 with the knight is generally seen as weak. I don't that black would recapture with the d-pawn, so the queen trade wouldn't be allowed. by recapturing with the b-pawn, black moves one of his pawns closer to the center and gains additional influence over the center. I'm not an opening expert but I think that's why it's not played.

6. e5 Qa5+ wins the e pawn.

Why would White wish to push the e-pawn when he can develop the Knight to c3 in 6. e5 ?
