I once lost as white from this position in a friendly game against an inexperienced player. It sure bumped king shelter up my list of priorities when evaluating positions.

Yeah I play risky positions quite a lot so I'd think of exd5 first, but I think nf3 would be better or maybe nf3 instead of nc3

Ditto to this advice. 5. Nf3 is important to play to prevent exactly that gambit from Black. The same situation occurs in the Queen's Gambit when Black plays the gambit ...e5.

6.Qe2!? is an interesting move, if you're willing to gamble (mildly). If you don't like it, then 6.Nf3 is your move- 6.dxe5 and 6.d5 do not promise anything.
