Im learning the KIA and was wondering if black challenges knight with bishop if this is how i respond

If your opponent wants to give you the bishop pair, and trade off his only developed piece, then carry on!

Yes, you took correctly.  I have run across the same thing  as white in lines of the English where my opponent will capture.  I have taken back with the e-pawn with good results.

I think so.I don't think you will get this position very often, but it's interesting to talk about. You won't get the stereotypical KIA though...I think black would need to place pawns on the whites squares after ceding the two bishops  -perhaps playing c6...many things could happen.I would consider fianchettoing my DSB and aiming for c4. That's one idea...

Word of advice Thomas...STOP with the 4 move mate attempts.  It will only slow your improvement.

by the way, do you see that white can safely move Nc3 and that the d pawn is pinned, by a bishop at b7- possibly winning 2 pawns and roock to for a bishop?

Being a 1100 player my advice for you is to open the game with either a queen pawn or a kings pawn opening and focus on devolping your pieces to good squares, then castle and capture the semiopen or open files with your rookes once connected.

If you do this and learn to do this properly Ill promise you that you will experience a fantastic increase in playing strenght.

When this is done you may start to read about and learn a few openings and defences that you like to play.

Just a friendly advice from another amateur;))
