I know that the white rook usually goes to d1. However, after the rook goes to e1, the interesting Nd5 becomes possible.

It depends on what black does. In some lines the rook belongs on e1 and on others belongs on e1. for example putting the rook on e1 wouldnt be so great if they went for a sheveningan setup with d6/e6 or d6/e5. but in alot of lines where black hasent played d6 the knight can come to d5 sometimes.

Well, i can see what you did. In order to get to this position you had to make black pass a move, give white one more tempo, gift the first player with a move he wouldnt have in a normal game. You did that with 6...h6 a move that makes no sense, has no meaning and will not have any impact in the game. But even so, i still cant see much for white after 9....exN 10 exd (i dont see any future in 10 Qxd either, unless i am missing something obvious) 10....Be7 and either 11 dxN bxc or 11 d6 0-0. 

Please correct me if you see something different.

Why should Black play something like 7...h6?

But OK, lets suppose that all that happened. What's the point? Black will simply ignore the knight, and play something like 9...d6 or even 9...Bc5 and castle, and I find it hard to understand what white has achieved.
