Do you mean italian game anti fried liver?
The most boring ones are the London system and Giuoco Piano, but I'll vote for the London system as you cannot avoid it as easily as the Giuoco Piano.

Otherwise, if I had to pick we have exchange french, four knights, London
I face the London quite a lot when trying to play the KID, and it's annoying and boring because I can't practice my fun KID and I get some position with no tactics, and I try to create something so I get crushed.
As a French player, no wonder I face the exchange french a lot... and I get quite bored sometimes but I learned to grind the position out, and winning this kind of position makes you feel good because it's a sign of you being better than the opponent. I just play it like any other system you know and try to create good interesting plans to sharp it up.
However none of them are gonna be my vote.
I remember when I was getting bored from exchange french I used to play e5 and try to get some traps... I was really annoyed by the boring, symmetrical, standard four knights and you can hardly punish such a solid opening as black.
Therefore my vote is the Four knights

Since I am not a Ruy Lopez player you never hear a complaint about it from me though
