For most players (U2200), learning theory isn't really practical, for the reasons you listed. It can help to learn the fundamental basics of an opening, sure (the first five moves or so)—but beyond that . . . Eh. I'd save it for later. And that's if you even need it.
It's a bit of a catch-22. The challenge I am facing is that not knowing those first five moves means I don't know why and where they are trying to achieve board position so it takes a little longer to analyse it as apposed to if I had known the opening. On the other hand, as the OP stated, if you don't have the mid to endgame side of things under the belt you end up in situations where even if you pulled off the opening you feel like a dog that just caught a squirrel and don't know what to do with it next.
