Are there any named openings that use the king as a fighting piece instead of keeping it away from the battle?

Yes. If you're the type of play who loves to fight with the king, try the Bongcloud Attack: 1. e4 e5 2. Ke2!

Depends on how you define 'fighting'. There are plenty of openings with lines involving king moves that aren't castling, examples being in the Caro-Kann, Benko Gambit and Nimzo-Indian. However the king is too far from the action to actually attack anything in the opening

Basically any opening where the king is used to help control the center or any other important area of the board.

In terms of games (not openings) which saw the King as an active piece, there are several famous examples. This is perhaps one of the most legendary king walks though, and one that even today GMs talk about!
