There is a bunch of ways to play. It matters what you want to do: open, closed, aggressive, stealthy...?
Playing against the Silican

There is no single method that is "best" for all times.
The #1 pick by GMs is the Open Sicilian (white plays 2. Nf3 and then pushes d4.
Also popular is the Bb5(+) lines, where it looks like an Open Sicilian, but if Black plays 2...Nc6 or 2...d6, White plays 3. Bb5 instead of the Open Variation.
There is the Smith Morra Gambit with 2. d4 and if cxd4 3. c3
Then there is the Alapin line 2. c3
The Grand Prix line with 2. f4 (or after 2. Nc3, then f4)
There is the Closed Sicilian 2. Nc3
Pick one and study it. Practice it. Learn it and see if it works out for you.

I have found that many Sicilian players have a pet line (Dragon, Najdorf, Schevenningen etc...) and if you play the Bb5 stuff, they keep trying to play those structures regardless of their fit for the change to non-open line. That being said, you will still have to learn something against Move-2s that are not Nc6 or d6: e6; Nf6; a6; g6...
