The Queen's Gambit Accepted is recommended in "A Chess Opening Repertoire for Blitz and Rapid." Nice book. The book explains why Be6 works to hold onto the extra pawn. I'm going to try it the next time I play against QGD. I'm not sure many have studied the Queen's Gambit Accepted and it might throw them out of their game.
3..Be6 is not a very good move for black. There are many other choices which present a lot more complications. The two center pawns that white gets in this opening will chase that bishop around.
3..Nf6 and 3..Nc6 are a lot more common. 3..e5 presents some unusual challenges.
The more you learn, the likely you will be to say that you have solved the problem of the opening. Yes, you have it solved if black plays badly.
Nf6 is useless- 4..Nf3 bg4 5...be3
Nc6 is useless-4...Nf3
e5- not more than a queen exchange.

3...Nf6 4.Nf3 Black can just take the e-pawn!
3...Nc6 there is a ton of theory on this line, after 4.Nf3, Black simply plays 4...Bg4. White then has 5.d5, 5.Be3, or 5.Bxc4. Black is fine.
3...e5 the worst thing White can do is trade queens. The only move for White to try to gain an edge is 4.Nf3 to which Black has either 4...exd4 or 4...Bb4+
Also, 3...c5 and possibly 3...b5 (not an option against 3.e3) are options as well.
