I think Be7 would be a good response. But, then again, at my level, what do I know?

Be7 I would think, which probably threatens Nxe4.
Nxe4 Bxe7 Nxc3 Bxd8 Nxd1.
Rb8 if b3...Bb4 Qd2...Qa5
Rb8 if Rb1...Bb4 intending Qa5
Rb8 if Qc1...Bb4
the reason white doesnt play Nxc6 in these openings is because of blacks counterplay on the b-file then white playing Bg5? further abandended the dark squares on the queen side so Rb8 and Bb4 are easy follow ups why delay black is a little better in all lines
