I'd prefer to play 3. e3 or 3. Nc3.
Both are ok... Which move leads to position you'd like to play?

What should I play after 3.e3 Nc6 4.Bxc4 e5 ?
what if 5. d4 exd4
What should I do after 6...dxe3 7.Qb3 Na5?
Maybe get a decent book on the opening, one by Delchev pretty good, This will give an idea of what white is trying to acheive in different lines. Alternatively look though some well annotated games by strong players.
