Personally I stick to one per black response however I do know players who mix it up a lot. Do what you want :)
Should I play more than 1 opening white?

Why, if you find can find one solid white opening that works for you? I understand 2-3 for black, because except for openings that do not go beyond the sixth rank, you will need more than one response to white.

But doesn't white also have to do 2 openings cause its just fun for the game or something? I was just wondering.

A lot depends on what your ultimate goal is. If you are below 2000, and studying middlegame structures, you should play many different openings to understand the underlying ideas with each pawn structure, like the Minority Attack in the Carlsbad Pawn Structure (which comes USUALLY from the Exchange QGD, but can also come from other openings), or the attack on d4 in the French.
After you have gotten a solid foundation for each of the typical middlegame pawn structures, you probably have a better idea where your comfort zone is, and can probably narrow your repertoire, and can at that point focus on Openings. For example, in my case, I have played just about everything at one point or another, but now, I pretty much confine myself to 1.d4 and 1.Nf3 as White, and the Modern along with the Pribyl/Wade/Philidor lines via 1...d6 (no Pirc - Black doesn't Fianchetto the King's Bishop) as Black. I have, however, played 1.b3, 1.b4, 1.c4, 1.d4, 1.e4, 1.f4, 1.g4, 1.g3, 1.Nc3, 1.Nf3 as White, and the Najdorf, Dragon, Taimanov, Scheveningen, Open Ruy, Bird's Variation of the Ruy, Berlin Defense, Breyer Defense, Zaitsev, Petroff, Latvian Gambit, French, Caro-Kann, Pirc, Modern, Alekhine, Scandinavian, and many offbeat lines as Black. As a result, I've seen many different structures, and upped my rating from 1800 to 2100 in the last 15 years. Many others that I know still sit at the same rating as 15 years ago, or else maybe increased by 100 points, and they pretty much played the same openings their entire life (especially the dragon being pretty popular in the area I'm in).
Should I play more than 1 opening for each color? 2-3 for black and 2-3 for white? I play the queens gambit. I play the sicilian or benoni for black.
