It is called the crab because you use the a and h pawns as pinchers like a crab

The crab opening begins with the moves a4 followed by h4. I recently came across this opening and looked up some videos on if its actually viable and an okay opening. Surprisingly it is but there are a lot of different crabs. I saw an Eric Rosen video on the crab and he plays a4 h4 then d4 which isn't the most accurate unless you're kind of playing it like a scandi. A different video by the chess giant said that it is best to play d3 then e3 followed by Nd2 and Be2. However I think that the best way to play is kind of like a reversed caro (but you played a4 and h4 so you're a tempo off) with c3. Pretty interesting
