So why is it different when its a 1000 judging a 700?

As Black against , you can create similar structures by playing 1d4 d5 and responding to basically anything with the aggressive ...c5, or ...c6 (the Slav). These allow you to reuse much of the knowledge you gain from the Queen’s Gambit as White.
Against e4, play the Caro-Kann Defense, which often leads to slower, more positional battles. Many e4 players expect sharp and tactical battles, so the more safe Caro-Kann can take them out of their comfort zone. The Caro also shares the same c6 d5 pawn structures as the Slav.
This repertoire minimizes the amount of theory and ideas you have to learn at the beginner/ intermediate levels by overlapping as much of the ideas as possible and by cutting down the opponents responses.
